Ingredients
- 1kg of waxy Ratte Potatoes
- 50g Unsalted Butter
- 2 Large Onions
- 16-24 Anchovy Fillets in Oil
- 450mls Single Cream
- Salt & Pepper
Method
- Grease the gratin dish with a little butter. Melt the remaining butter In a pan, add onions and cook for about 10mlns until softened and llghtly browned.
- Cut the ratte potatoes Into matchstick sized pieces - easiest using a mandolin, or a small cutting disc on a food processor, or simply with a knife.
- Layer the potatoes, onions and anchovies into the gratin dish, starting and ending with the potatoes.
- Criss-cross the anchovies as you go, and season between layers.
- Dot with remaining butter and put In a preheated oven 190°c 375°f or gas mark 5 for 10 minutes.
- Remove form the oven, pour over half the cream and return to the oven for a further 10 minutes.
- Pour over the remaining cream and cook for about 20-50 mins or until the potatoes are tender and golden brown.
