Anstruther Crab Salad

White crab meat bound in a little lime mayonnaise and shaped in an espresso cup. Served on sliced 'Salad Blue' potatoes, diced mango and shredded basil and yellow pepper dressing.
Anstruther - is the largest of the villages in the East Neuk region of Fife. (Not far from St. Andrews)
'Salad Blue' potatoes - potatoes whose seeds date back to the 1900's, an attractive- looking waxy salad potato with a blue flesh.These blue pigments are antioxidants.
Yellow pepper dressing - Roasted yellow peppers, saffron, sugar and olive oil.
